CITRUS SPROUT STUFFED SALMON
Ingredients:
• 1 slice Sweet Bread (day old), cut into 1/4 inch cubes
• 1/2 cup Broccoli Sprouts, packed tightly
• 1/3 cup Maui Onion, thin slice (may use Red Onion)
• 1/4 cup Dried Cherries
• 1/4 cup Dried Cranberries (may use other dried fruit)
• 1 Egg White, lightly beaten
• 2 Tbls Lemon Juice (may use lime juice)
• 16 oz Salmon Filet, center cut (at least 1 inch thick)
• Salt and Pepper
Directions:Mix together the sweet bread, sprouts, onion, dried fruit, egg white, and 1 Tbls lemon juice. Blend well. Slice salmon filet in half, leaving one side intact. Fill center of salmon with mixture, salt and pepper to taste, press together gently. Drizzle top of salmon with remaining 1 Tbls Lemon juice. Bake 400 degrees for 15-20 minutes. Serve immediately.
