POI NUT MUFFINS
Ingredients:
• 1-1/2 Tbls Taro Brand Hawaiian Poi Powder
• 1 cup water
• 1 cup flour
• ½ cup sugar
• 1 tsp baking soda
• ½ tsp cinnamon
• ½ tsp salt
• 2 eggs, slightly beaten
• ¼ cup oil
• ½ tsp vanilla
• ½cup chopped Macadamia Nuts
• ½ cup shredded coconut
• ½ cup raisins
Directions:
Preheat oven to 375º F. In a small bowl combine Hawaiian Poi Powder and water; blend well. Heat in a microwave oven on medium high for 1 minute; stir well. Heat for another 30 seconds; stir until smooth. Cool 5 minutes. In a large bowl, sift together flour, sugar, baking soda, cinnamon and salt. Combine eggs, oil and vanilla; add to flour mixture and mix well. Fold in poi, macadamia nuts, coconut and raisins. Pour into muffin tins with paper liners.
Bake for 20-25 minutes.
Makes 12.
